Bread is for sure one of the villain of anyone's diet. It might be one of the hardest food to give up!
But what people don't know is that, the bread itself is not bad for us but the ingredients that are used to bake it. It normally contain lots of sugar, wheat, yeast, salt and god knows what else!!!
A couple of months ago a good friend of mine shared with me recipe for this amazing real low carb, high fiber and high fat bread. I was a bit skeptical when I saw the ingredients but I decided to give it a try.
You have to agree with me, that a lot of those " no "something" bread" end up being hard, tasteless or " uneatable". But for my happiness, not this one!!!
It is deftly a guilt free bread, the fiber feel you up, so you don't need to eat lots to be satisfied, if you are in a low carb diet you can even add some REAL butter (I suggest Kerrygold pure irish butter).
You can toast it, butter it, peanut butter it... you name it!!!! ... diet doesn't need to be boring! be creative and enjoy the process!
Recipe - High Fiber, Low Carb Loaf
- 100 gr sunflower seed
- 100 gr of Sesame Seed
- 100 gr of Linseed
- 100 gr Grated Coconut
- 100 gr of almond flour
- 4 tbsp Chia
- 4 eggs
- 8 tbsp of fresh cream or Greek yogurt
- 1.5 tbsp baking powder
To have a sutil hint of sweetness add 2/3 Medjool Dates, if you prefer savory add 5 tbsp of grated parmesan cheese.
All the seeds must be toasted apart from the linseeds. After toasted all the seeds must be crushed in a blender or food processor (if you have chosen the sweet version, add the dates to blend).
Mix the eggs, greek yogurt (or fresh cream) and cheese (if you have chosen the savory one) in a bowl and then the remaining ingredients including the baking powder.
Place in a small baking tray.
Baking in a pre-heated oven for 40-60 min. 150 degrees.
Enjoy in moderation!!! And remember it is all about balance! Overeating is not healthy even if you are eating the "right" food !!! ;)
